Jambalaya One-Pot Meal

THIS gentle yet flavor-packed one-pot meal is truly satisfying even to people who are avoiding hot, spicy dishes. You may use shrimp, chicken or pork.


2 tablespoons olive oil

3 onions, chopped

2 cloves garlic, chopped

226 grams of shrimp (all shells removed and cleaned; or  shrimp that is cooked and then frozen)

½ cup dry white wine

793 grams of diced tomatoes

½ cup water

½ tsp thyme

½ tsp basil

¼ tsp paprika

1 tsp very low-sodium beef bouillon

¼ tsp Tabasco sauce, optional for extra hot

1 cup uncooked rice (not instant)

225 grams of low-fat sausage (kielbasa)

1 cup frozen chopped green pepper (or fresh)

* Heat olive oil over medium heat; add onions and garlic; stir-fry 5 minutes.
* Add shrimp, wine, tomatoes, water, thyme, basil, paprika, bouillon, Tabasco, rice and kielbasa.
* Simmer covered for 30 minutes.
* Stir in chopped pepper.
* Simmer an additional 10 minutes.
