Crispy Squid with Sweet Chili Sauce

1/2 kilo medium squid, sliced into rings

1 Tbsp vegetable oil

2 cloves garlic, minced

1 onion, sliced

1/4 cup red bell pepper slices

1/2 cup baby corn

1 finger chili, cut diagonally

1 cup sweet chili sauce

Salt and pepper, to taste

1/2 cup cucumber, seeded and diced

Steamed rice, to serve

For the batter

1/2 cup all-purpose flour

1/2 cup cornstarch

1 cup water

1/2 tsp baking powder

1/4 tsp salt

Vegetable oil for deep-frying

* Make the batter: Mix all the ingredients in a bowl to make a smooth mixture.
* Heat oil in a deep pan. Dip squid into the batter and deep-fry until crisp. Drain on paper towels and keep warm.
* In another pan, heat oil and sauté garlic and onions until fragrant. Add bell peppers, corn, and finger chili; sauté until tender. Add chili sauce and season to taste. Mix well.
* Arrange squid on a serving platter or in individual bowls filled with steamed rice. Pour sauce and vegetables over. Top with diced cucumber.
