Vegetarian Recipes From Mama Sita’s
Mapo Tofu
2 tbsps. cooking oil
2 tbsps. chopped garlic
1 pc. onion, quartered
2 tsps. grated ginger
1 1/2 cups snowpeas, stringed
10 pcs. young corn, sliced
1 pc. red bell pepper, cubed
1 pc. green bell pepper, cubed
1/2 cup water
6 tbsps. Mama Sita’s Vegetarian Oyster Sauce
6 pcs. shiitake mushrooms
1 pack tofu, cut into 1/4-inch thick triangles and fried
2 tsps. cornstarch, dissolved in 4 tsps. water
In a wok, heat oil. Sauté garlic, onions and ginger.
Add snowpeas, young corn and stir-fry for one minute.
Add bell peppers, water, Mama Sita’s Vegetarian Oyster Sauce shiitake mushrooms and fried tofu. Bring to a boil. Lower the heat and thicken with dissolved cornstarch.
Serve hot over steamed rice.
Makes 4 servings
Banana Blossom Patties With Soy Ginger Sauce
For the torta:
2 tbsps. cooking oil
1 pc. onion, chopped
4 tbsps. chopped garlic
1 pc. puso ng saging (banana blossom), chopped
1 pouch Mama Sita’s Pang-Gisa Mix
3/4 cup chopped singkamas (jicama)
2 stalks wansoy (fresh coriander), chopped
5 stalks kutchay (chives), chopped
3 pcs. egg, beaten
1 tbsp. chopped spring onions
cooking oil for frying
Rinse the chopped puso ng saging and squeeze out excess water.
Sauté the garlic and onions, then add the puso ng saging and Mama Sita’s Pang-Gisa Mix. Cook until the puso ng saging is tender.
Add singkamas, wansoy and kutsay. Stir-fry.
Remove from heat. Set aside to cool before adding the eggs and spring onions. Mix well.
Form small patties (2 1/2-inch in diameter) and pan-fry. Serve with Soy Ginger sauce.
For the soy ginger sauce:
1 1/4 cups water
1 tbsp. sugar
1/4 cup Mama Sita’s Oyster Sauce
2 tsps. cornstarch
1 tsp. chopped garlic
1 tbsp. grated ginger
1 tbsp. cooking oil
1 tbsp. chopped spring onions
Combine all ingredients except for spring onions. Bring to a boil and cook until sauce thickens.
Pour over banana blossom patties and top with spring onions.
Makes 16 patties
Vegetarian Hot Pot
4 cups water
1 tbsp. ginger, cut into strips
1 pc. onion, sliced
1/2 cup sliced carrots
1 stalk leek, sliced
5 pcs. young corn, sliced
2 tbsps. Mama Sita’s Oyster Sauce
1 pouch Mama Sita’s Pang-Gisa Mix
1 pack sotanghon (glass noodles), soaked in water
1 cup sliced Chinese cabbage
Combine water, ginger, onions, carrots and leeks in a saucepan. Bring to a boil and cook for five minutes or until the onions soften.
Add the mushrooms, young corn, Mama Sita’s Oyster Sauce, Mama Sita’s Pang-Gisa Mix and let the mixture boil for another three to five minutes.
Add the sotanghon and Chinese cabbage. Cover and cook until the sotanghon is tender.
Add salt and pepper if desired. Serve hot.
Makes 5 servings
